Double Chocolate Chip Muffins: Recipe

Welcome to Food Friday! Last week, I promised that I'd be back this week with another muffin recipe... so here it is!

These double chocolate chip muffins are JUST LIKE the ones you find at the grocery store... you know, the really big, dense muffins that feel more like cupcakes but you call them muffins to justify eating so many? Yep, those.



I have been obsessed with all things chocolate lately. Maybe it's the baby, but in reality, I've always loved chocolate. I'm just okaying it a bit more now because I can blame it on the little life inside me! ;-) 

Seriously, though... these are great. I am so glad I finally have a recipe to make these too. I know EXACTLY what goes into them, so I don't have to worry about the ones from the store anymore... because let's be honest: I bought those. Not frequently, but I did. Never again. These are so alike and not difficult at all, so I'll be making them from now on. I may or may not have individually wrapped them and popped them in the freezer so I can that have them whenever I want. Yep. 


Double Chocolate Chip Muffins

INGREDIENTS

• 1/2 cup butter, softened
• 1 cup sugar
• 2 tsp vanilla extract
• 2 tsp baking powder
• 2/3 cup cocoa powder
• 1/2 tsp salt
• 2 eggs
• • 3/4 cup milk
• 1/3 cup sour cream
• 2 cups flour
• 1 1/2 cups chocolate chips (I use the mini ones)


DIRECTIONS

1. Preheat oven to 350º, and line a muffin pan with 12 liners. 
2. Cream together the butter, sugar, vanilla, baking powder, cocoa powder, and salt until light and fluffy.
3. Add the eggs one at a time, beating with each new addition.
4. Add the milk and sour cream.
5. Add the flour and chocolate chips.
6. Mix until ingredients just combined.
7. Divide batter between 12 muffin liners. *Batter will be VERY sticky.
8. Bake for 25-27 minutes or until a toothpick comes out clean.

Strawberry Banana Muffins: Recipe

It's another Food Friday already - crazy, right? This year is just passing too quickly.

Today's recipe is brought to you by a post I made last week that included a couple pictures of muffins... and I was so rude to not even share the recipes! Oops! I'll share one today and another one next Friday... mostly out of guilt. And because they're delicious.

Today, you get strawberry banana muffins. They're yummy and made with fresh fruit... so you don't have to feel AS guilty about them.


Throughout all of the snow we've had in Dayton this year, our across the street neighbor has consistently cleared off our driveway for us each and every time with his snow blower. I knew I wanted to do something kind for him, so I rummaged through my pantry, refrigerator, and fruit stash and decided these would be the best. 

I'm so glad we made them (and kept a few for ourselves)! These are definitely repeat muffins. I'll be making a new batch soon just because they're so yummy. 


Strawberry Banana Muffins

DRY INGREDIENTS

• 1 3/4 cups flour
• 2/3 cup sugar
• 2 tsp baking powder
• 1/2 tsp baking soda
•  1/4 tsp salt


WET INGREDIENTS

• 2 ripe bananas, cut into small chunks
• 1/2 cup softened butter
• 2 tbsp milk
• 2 eggs
• 8 strawberries, cut into small pieces


DIRECTIONS

1. Mix dry ingredients together in a mixer.
2. Mix wet ingredients in to dry ingredients, and mix until well combined,
3. Bake at 400º for 20 minutes.
*Makes 12 muffins

Cookie Candy Brownies {Recipe}

A couple years ago, I made a delicious treat to share with my students, and they loved them so much. I posted this recipe on my old blog (that I do NOT use anymore), and I want to transfer everything over to this current platform. 

This recipe sure did go over well with a group of ravenous eighth graders at an after school Halloween party way back in 2012. I have since made them a few more times, and they are ALWAYS a big hit!

For lack of a batter name, I just call them the "Cookie Candy Brownies" because, well, they're made of cookies, candy, and brownies... clever, huh?

Basically, you create the bottom with chocolate chip cookie dough, then add a piece of candy, and cover that with brownie batter before baking. It's simple, but it was still time consuming because of all the steps and the amount that I made. If you make just one batch, though, it won't take too long - AND you can always use the rolls of pre-made cookie dough and just cut off enough to fill the bottom of each cupcake liner instead of making your own dough!

















THE RECIPE

1. Make cookie dough. (Directions for MY cookie dough are found below if you want to use that, but feel free to use the pre-made rolls in the refrigerated section of your grocery store - that works well too.)

2. Line muffin pans with cupcake liners. *This step is a MUST because I tried them without liners, and I had to scoop them out with a spoon, and they were AWFUL looking!

3. Smoosh cookie dough as flat as possible into the cupcake liners.

4. Cut Reese's Peanut Butter Cups in half (or whatever candy bar you prefer - the beauty of this recipe is that you can EASILY customize it however you like!)

5. Place one half of Reese's Peanut Butter Cup on top of cookie dough in each cupcake liner.

6. Make brownie batter according to box mix.

7. Pour brownie batter over cookie dough and Reese's Peanut Butter Cup. *Make sure you cover the entire thing for best results.

8. Bake for 18-20 minutes on 350º.

Cookie Dough Recipe
·       1 cup butter, softened
·       3/4 cup packed brown sugar
·       1/4 cup white sugar
·       1 (3.5 ounce) package instant vanilla pudding mix
·       2 eggs
·       1 teaspoon vanilla extract
·       2 1/4 cups all-purpose flour
·       1 teaspoon baking soda
·       2 cups semisweet chocolate chips

Directions
In a mixing bowl, cream butter and sugars. Add pudding mix, eggs and vanilla. Combine flour and baking soda; add to creamed mixture and mix well. Fold in chocolate chips.
